Herbed Chicken Thighs with Apples and Cranberries

Ingredients 8 boneless, skinless chicken thighs, excess fat trimmed
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon dried rubbed sagev 1/4 teaspoon coarsely ground pepper
1 tablespoon canola oil
4 medium Golden Delicious apples, cored, cut into ½ -inch wedges (about 5 cups)
1/3 cup dried cranberries
2 teaspoons brown sugar
1 teaspoon lemon juice
1/2 teaspoon cinnamon
Preparation In small bowl, mix together salt, thyme, sage and pepper; sprinkle mixture over chicken. In large non-stick frypan, place oil and heat to medium high temperature. Add chicken and cook about 5 minutes per side or until chicken is browned. Remove chicken to platter and set aside. To drippings in same frypan, add apples and cook, stirring, 2 minutes. Sprinkle cranberries, brown sugar, lemon juice, and cinnamon over apples, stirring to mix. Arrange browned chicken and accumulated juices over apple mixture. Reduce heat to medium-low and cook about 5-8 minutes or until chicken is tender. To serve, arrange chicken on serving platter and surround with apple mixture.
